The words "cloud server" can make different types of infrastructure sound similar.
A VPS and a hosted Mac, however, serve different purposes.
A VPS provides a virtualized server environment that is commonly used for websites, applications, APIs, databases, development environments, and other server-side workloads.
A cloud Mac gives you access to an actual Mac environment for workloads that require macOS and Apple hardware.

So the question isn't necessarily which one is better.
The better question is: what does your project actually need?
If you're hosting an API or backend application, a VPS hosting environment may make sense.
If you're working with Xcode and Apple-platform development, you may need a dedicated Mac environment.
Sometimes, a modern application needs both.
